Escaping Reality in the Kitchen

Our time in the kitchen hasn't slowed down the last 7 months of this godforsaken pandemic. We figured we might as well improve our cooking skills if we're going to be stuck at home. And we obviously have to eat, so why not make GREAT food instead of mediocre food to eat while we're at it?  Our go-to meals have become a little tastier, and our creativity with items we have on hand (especially since we've been limiting our trips to the store) have been on point.

The most fun that we've had in the kitchen the last few months have been our own version of "Iron Chef" where we compete to make the best meal (including different categories such as most creative, tastiest, and presentation) as well as working together to create traditional dishes we have tried and loved from countries we have visited. I call them, "Edible Vacation Memories". Creating these meals together not only have directed us to meaningful bonding experiences by allowing us to talk and reminisce about amazing travel experiences, but they have also given us the opportunity to internally immerse ourselves in these memories. Each one of these internal experiences while preparing these memorable dishes have been extremely therapeutic, and overall my saving grace when needing to relieve stress and boost my mood during these hard times.

I look forward to indulging in real, authentic dishes once again when we are able to return to traveling abroad (whenever that may be). In the meantime, I'll continue to practice my cooking skills, bond with my husband, find inner peace and happiness, and send my taste buds down memory lane to unforgettable trips and times when the option to travel abroad existed.
